This past week Jesse and I were driving around town doing some errands when we drove by Mockingbird Cupcakes in Elkhorn. We all know that I can’t pass up a good cupcake so we had to make a stop.
Mockingbird Cupcakes was opened by 2 local twin sisters who apparently not only have killer baking skills but also impeccable taste in interiors, look how adorable their shop is!
Their menu features unique creations like Mint Dandy, Mighty Mocha, and Snickerdoodle Doo all made fresh each day. Each day the flavors change and there is always a unique cupcake for each month. This month’s was Johnny Appletreat: an apple cupcake baked with streusel, topped with cream cheese frosting, and drizzled with caramel sauce.
We got there later in the afternoon and they were a little picked over but the baker said she would have some fresh cupcakes available if we could wait a few minutes – of course we could spare a few minutes for cupcakes.
Waiting allowed us the time we needed to look over the menu and make the very difficult task of narrowing our choices down to 2 winners.
I went with Sweet & Scrappy which is avanilla cupcake dipped in caramel, topped with pretzels, salty caramel butter cream, and a pretzel twist. Yum. Salty + Sweet married in perfect harmony.
Jesse made the wise choice to go with the oh so gooey Chocnoxious: Chocolate cupcake with Nutella center, dipped in dark chocolate ganache, sprinkled with coarse salt, topped with a Nutella chocolate buttercream, dark chocolate drizzle and milk chocolate curls. Uh yeahhh all that packed into this little cupcake!
